Jerk Chicken in New York
Jerk is a Jamaican cooking method before it is a flavor: a wet-and-dry rub built on scotch bonnet, pimento (allspice), thyme and scallion, worked into the meat and then cooked over fire so the smoke becomes part of the seasoning. Done properly it is hot, but the heat sits behind the allspice rather than in front of it.
How we make our jerk chicken
Ours is boneless, marinated through rather than painted on the surface, then fire-grilled so the edges char while the inside stays moist. The scotch bonnet is in the marinade, which is why the heat runs all the way through the piece instead of sitting on the skin. It plates over coconut jasmine rice, rice and beans, Bazodee rice or roasted sweet potato, with veggie medley and fried sweet plantains included.
