Roti in New York

Roti is the Trinidadian answer to a complete meal in one hand: a soft, pliable flatbread wrapped around curry. In Trinidad it is street food and Sunday food at once, and the bread matters as much as the filling. Dhalpuri is split-pea-filled and slightly sweet, the traditional wrap for a curry roti; paratha — "buss-up-shut" — is layered, torn, and flakier.

How we make our roti

Every roti is folded to order around curry that was ground and simmered in our own kitchen, not opened from a jar. The chicken and goat are cooked down slowly until the meat gives against a spoon, and the curry is built on a home-ground masala rather than a commercial blend. Dhalpuri is the default wrap; paratha is a straight swap at no charge, and channa and potato or pumpkin can be folded in alongside.
